Zuppa d’Erbe (Lettuce Soup) Recipe
Ingredients:
2 bundles of sorrel (small)
some stock (good)
1 pc of lettuce
a bundle of envide
1 celery stick
a small bundle of chervil
1 pc of onion
1 pc of carrot
a pinch of Parmesan cheese; grated
some French roll; toasted
Instructions:
Boil these herbs and veggies for one hour in stock: sorrel, endive, lettuce, chervil, celery, onion and carrot — all washed well and chopped. Slice toasted roll, put into bowl then pour soup on top.
Serve and hand Parmesan separately.
