Zampetti (Calves’ Feet) Recipe
Ingredients:
2 pcs of feet (calf)
Butter
Leeks
Onions (small)
Parsley; chopped
Stock
Salt & Pepper
Good meat gravy
2 Tbsps of tomato puree
2 pcs of egg yolks; beaten well
1 Tbsp of grated cheese
1/8 tsp of cinnamon
Instructions:
Blanch the feet then get the bone. Place them on a stew pan; add butter, onions or leeks, parsley, small amount of stock, salt, and pepper. Boil until liquid has slightly reduced. Add pureed tomato and gravy.
When almost done, add beaten egg yolks, cinnamon, and cheese; mix them well. Serve while hot.
