Whiting alla Genovese Recipe
Ingredients:
1-2 pcs of whiting
3 1/2 ozs of butter
a pinch of salt
a pinch of pepper
2 pcs of bay leaf
1 glass of claret
1/2 tsp of parsley; chopped
1/2 pc of onion
1 clove of garlic
4 pcs of caper
1 pc of anchovy
3 Tbsps of vinegar
2 glasses of Espagnole sauce
some button mushrooms
Instructions:
Put whiting inside saucepan along with butter (2 ozs), pepper, salt, claret, bay leaves plus salt. Cook over high heat, turning fish whenever necessary.
Make sauce (remoulade) beforehand since it tastes better: Mix in saucepan some butter (1.5 ozs), parsley, onion, garlic (having 1 cut), capers and anchovy. Chop everything except garlic up. Add vinegar, reducing sauce.
Next, add sauce (Espagnole) plus some stock. Remove bay leaves and garlic, boil mixture then pass it through sieve. Pour over whiting. Then for some minutes, boil everything again.
Cook some mushrooms separately and use as garnishing. Serve.
