Vitello alla Pellegrina (Breast of Veal) Recipe
Ingredients:
1 pc of veal breast
1 stick of butter
2 pcs of Spanish onion
some white sugar
1 teacup of stock
1 glass of red wine
4-5 pcs of mushroom
few bacon bits
a pinch of salt
2 Tbsps of flour
1 pc of bay leaf
Instructions:
Roast veal breast. Glaze onions using butter plus some sugar. When browned, pour stock plus Burgundy then add some mushrooms, bay leaf, salt plus bacon bits.
When onions as well as mushrooms are done, skim fat off then thicken sauce using butter plus some flour fried at once. Pour over veal, putting mushrooms along with onions around container.
