Venetian Soup Recipe
Ingredients:
2 oz of butter
2 oz of flour
1 oz of grated cheese (Parmesan)
1/2 c of stock
4 pcs of egg yolks
Soup (clear)
Instructions:
Cook butter with flour, to make the roux. Add stock and cheese; mix thoroughly till formed a smooth paste. Take out from the heat then add egg yolks; mix thoroughly till formed a smooth paste.Form paste to small quenelles and boil them in small amount of soup then strain. Serve in good (clear) soup.
