Uova al Tartufi (Eggs with Truffles) Recipe
Ingredients:
6 pcs of eggs
2 oz of butter
2 Tbsps of cream
1 pc of truffle; sliced
Velute sauce
Marsala
Croutons; fried and glazed
Instructions:
Beat eggs then pass through the sieve. Place them on the double boiler above gentle heat with cream and butter; stir thoroughly. Saute truffle slices on butter then cover with the Velute and (1 glass) Marsala.
Add the mixture of sauce onto the egg mixture. Serve hot along with croutons.
Note: Truffles may be substituted with asparagus (tips), (cooked) ham, and peas.
