Tomato Sauce Piquante Recipe
Ingredients:
1 oz of ham; cut up
1/2 pc of onion; chopped finely
1/2 pc of carrot; chopped finely
1/2 pc of celery stick; chopped finely
1 pc of bay leaf
1 pc of thyme sprig
1 pc of clove
4 pcs of peppercorns
1/3 c of vinegar
1/2 glass of Chablis
1 c of stock
6 pcs of tomatoes; cut up
Velute sauce (or Espagnole)
1 tsp of castor sugar
Juice from 1/2 pc of lemon
1 oz of fresh butter
Instructions:
Heat butter on a stew pan. Add ham, onion, carrot, celery, bay leaf, thyme, peppercorns, and clove; fry and add vinegar. Once liquid has been absorbed, pour over stock and Chablis. Add tomatoes and cover.
Cook then pass mixture through the sieve, do not include thyme and bay leaf. Combine sieved mixture with (of equal quantity) Espagnole or Velute sauce.
Boil combined mixture then pass them again through the sieve. Lastly, add sugar, butter, and juice.
