Timballo alla Lombarda Recipe

Ingredients:

macaroni
fowl/game
2 eggs
some stock
1/4 c of Velute sauce
1 pc of tongue; cut into bits
1 Tbsp of butter
some truffles; diced

Instructions:

Butter mould that is smooth. Boil macaroni, making sure their pieces are long. When cool, line mould bottom with longest macaroni bits, letting macaroni circle.

When macaroni ends, join another piece extremely closely until entire mould will be lined. Remember to paint over constantly with beaten egg yolk.

Mask entire inside using fowl forcemeat (thin layer), making it stick using egg yolk. Cut remaining macaroni into bits, warm in little Velute, some stock (fowl), small amount of butter (melted), diced truffles and chopped tongue/fowl/game.

When mould gets filled, place new forcemeat layer, steam this for about one hour. Serve this with some brown sauce.
