Testa di Vitello con Salsa Napoletana (Calf’s Head) Recipe
Ingredients:
1/2 of the head (calf)
4 ounces of liver (calf); chopped and pounded
2 ounces of bacon
1 ounce of suet
3 pieces of truffles
6 pieces of almonds
3 pieces of olives
6 pcs of coriander seeds
6 pcs of capers
Brain (calf)
1/8 tsp if spice
1 tsp of herbs; chopped
Bacon pieces
Ham pieces
Stock
Neapolitan sauce (or tomato sauce piquante)
Instructions:
Boil head then get the bone. Fill with the stuffing: liver, bacon, suet, truffles, almonds, olives, coriander, capers, brain, herbs, and spice. Stitch head up.
Place on a stew pan along with the stock, bacon, and ham; stew them gently. Serve along with the sauce (Neapolitan or tomato piquante).
