Testa di Vitello alla Sanseverino (Calf’s Head) Recipe
Ingredients:
Half of head (calf)
1/2 pound if sweetbread
Liver (fowl)
2 pieces of anchovies
1 teaspoon of herbs; chopped
Capers; chopped
Brain (calf)
Half tumbler of wine (Malmsey or Australian Muscat)
1/2 cup of stock (white)
Bacon bits
Ham bits
1 piece of garlic clove (with 2 cuts)
Instructions:
Boil head then get the bone. Fill with the stuffing: sweetbread, liver, anchovies, herbs, brain, and capers.
Stitch up the stuffed head; braise in wine, stock, bacon bits, ham bits, and garlic. Cook slowly for 4 hrs and discard garlic before 10 mins of cooking.
Serve hot with (its own) sauce.
