Tacchinotto all’Istrione (Turkey Poult) Recipe
Ingredients:
Turkey poult
Ham slices
Bacon slices
2 pieces of bay leaves
4 pieces of lemon slices
1/8 teaspoon of mace
Stock
Salt
1 piece of onion
Parsley
1 piece of celery stick
1 piece of carrot
2 cups of Chablis
Instructions:
Truss the (turkey) poult then cover with ham slices, bacon slices, lemon slices, and (bay) leaves then sprinkle mace.
Tie inside a cheesecloth then stew in (good) stock, onion, celery, parsley, carrot, Chablis, and salt. Cook them for one hour then take the cooked poult out from the cheesecloth then pour over the sauce.
