Stufato alla Florentina (Stewed Beef) Recipe

Ingredients:

beef, veal or mutton; cut into pieces
1 pc of onion
3 pcs of rosemary leaves
1/2 glass of Burgundy
2 Tbsps of pureed tomato
some stock
1 clove of garlic
1 oz of butter
desired amount of potatoes; cut (optional)

Instructions:

Chop onions and rosemary, frying with butter. Add in meat and salt, frying for some time. Pour Burgundy plus tomato puree and cover pan. Cook mixture gently, occasionally stirring. If stew dries up, add stock.

Put in some potatoes if desired, chopping and adding them into stewpan about one hour prior to serving. If garlic is added, let it stay for only 5 minutes.
