Spinaci alla Milanese (Spinach) Recipe
Ingredients:
3 lbs of spinach; rinsed six times
1-1/2 oz of butter
1 c of Velute sauce (reduced)
Cream
Salt
Pepper
1 Tbsp of flour
1 Tbsp of butter
Eggs (hard boiled)
Espagnole sauce
Instructions:
Boil spinach with (2 cups) water. Mince them and pass through the hair-sieve. Place inside the saucepan along with butter, (reduced) Velute, salt, pepper, and the mixed (1 tablespoon) butter and flour.
Boil till spinach becomes firm to form into shapes. Garnish them with quartered eggs then pour Espagnole around the plate.
