Soup all’Imperatrice Recipe
Ingredients:
Fowl breast
1 tsp of rice (ground)
1 pc of egg yolk
1/8 tsp of nutmeg
Salt & Pepper
Soup (clear)
Instructions:
Pound fowl breast on the mortar. Combine with rice, egg yolk, nutmeg, salt, and pepper; mix thoroughly. Pass mixture through the sieve and form into quenelles. Serve in good (clear) soup.
