Soup alla Modanese Recipe
Ingredients:
1 lb of spinach; rinsed thoroughly and chopped finely
3 oz of butter
Salt
2 pcs of eggs
1 Tbsp of grated cheese (Parmesan)
1/8 tsp of nutmeg (or less)
For the garnish:
Fried croutons
Instructions:
Mix spinach with butter and salt; warm up and make it cold. Carefully pass them through the (hair) sieve then add eggs, nutmeg, and cheese.Add onto a (boiling) stock inside a saucepan and cover. Place (hot) coals on top so eggs will curdle; this will help make soup thicken.
Serve while hot and garnish.
