Soup alla Maria Pia Recipe

Ingredients:

1 c of butter
1 pc of carrot
1 lb of beans (white)
1 pc/stick of celery
1 pc of onion
2 pcs of leek
3 pcs of egg (yolk)
1 c of cream
some croutons; fried
some stock (white)
some green peas (boiled)

Instructions:

For about 12 hours, soak beans. Mix with butter, water and some salt into pot. Add celery, leeks, onion and carrot, simmering ’til veggies are cooked well.

Take all fresh veggies out and drain beans, diluting using white stock then passing through sieve. Put puree inside pot along with white stock. When puree boils, keep hot inside bain-marie ’til serving time.

Mix egg yolks with cream, putting it into soup. Then transfer soup to warm bowl, adding some peas. Serve and hand some croutons (fried) separately.
