Sogliole in Zimino (Sole) Recipe
Ingredients:
1 pc of sole
1 pc of small-sized onion
1 oz of butter
1 pc of beetroot; sliced
1 stick of celery; chopped
2 Tbsps of tomato sauce or 1/2 glass of white wine
Instructions:
Chop onion then fry with butter. Add sliced beetroot, celery, pepper, salt plus haddock or sole fillets. Boil over moderate heat in kettle. Add tomato sauce when beetroot’s almost cooked then boil again until well-done.
Aside from tomato, Chablis may be used.
