Sogliole alla Parmigiana (Sole) Recipe
Ingredients:
1 pc of sole
1 stick of butter
some Parmesan cheese; grated
1/2 gill of cream
cayenne
Instructions:
Fillet sole, wiping every one with cloth (clean). Put little butter onto every fillet. Make sauce (white), mix with cream and some Parmesan. Cover fish with sauce then bake for 20 minutes over moderate heat.
Lemon sole as substitute is allowed.
