Sogliole al tegame (Sole) Recipe
Ingredients:
1 pc of sole or mullet
1 oz of butter
1 pc of anchovy
a pinch of parsley; chopped
1 clove of garlic
3 pcs of caper
1 pc of egg
Instructions:
Put anchovy and butter in saucepan along with mullet or sole. Fry for some minutes, sprinkle with some parsley and pepper, mix in garlic (with a cut) then cook this for 30 minutes. Make sure to turn fish to other side when needed.
Some minutes prior to removing fish from heat, add capers plus egg yolk. Garlic should be left in only for 5 minutes.
