Scalopini di Riso (Beef with Risotto) Recipe
Ingredients:
1 pc of rump steak
1 stick of butter
2-3 c of rice
some sliced truffles
1 pc of tongue; cut into bits
some stock
4-5 pcs of mushrooms
Instructions:
Stew rump with mushrooms and tongue bits. Allow to cool then slice thinly. Butter dish (preferably pie dish), garnishing bottom with some cooked sliced truffles and tongue.
Put one sheet of seasoned and well-cooked risotto, one sheet of some beef then one last sheet of some risotto. Finally, heat then serve along with some fine sauce cascaded around it.
