Salmone alla Francesca (Salmon) Recipe
Ingredients:
1 pc of salmon
1.5 ozs of butter
1 tsp of parsley; chopped
1 pc of onion
a pinch of salt
a pinch of pepper
very little nutmeg
1 c of stock
1 glass of Chablis
1 c of Espagnole sauce
4 pcs of mushroom
1/2 tsp of anchovy butter
1 pc of lemon
Instructions:
Put salmon into stewpan along with butter, onion, blanched parsley, pepper, salt, stock, nutmeg and Chablis. Then cook over moderate heat for 30 minutes, occasionally turning salmon. Add Espagnole when dry.
Boil mixture until well done then transfer to dish. Put mushrooms (cooked with white sauce), anchovy butter plus lemon extract into sauce. Pour over salmon. Dish is ready for serving.
