Salmone alla Farnese (Salmon) Recipe
Ingredients:
1 pc of salmon
1 can of oil
1/4 c of lemon juice
a pinch of salt
some thyme
a dash of pepper
some nutmeg
1 pack of mayonnaise
some lobster butter
1 tsp of gelatine
1/4 c of Velute sauce
Spanish olives
some anchovy butter
mushrooms (in oil)
truffles (white)
some crayfish
Instructions:
Boil salmon. When it cools, fillet it then marinate for 2 hours with lemon extract, oil, thyme, salt, nutmeg and pepper. Add lobster’s butter with mayonnaise, Velute and little gelatine (dissolved).
Wipe fillets then arrange circular in dish. Pour mayonnaise on them and decorate border with jelly (aspic). Stuff olives with truffles, anchovy butter, crayfish and mushrooms. Place olives in center of dish.
