Roman Sauce Recipe II
Ingredients:
1 pc of onion (small); cut up
1 Tbsp of butter
1/2 Tbsp of flour
Juice from 1 pc of lemon
Zest from juiced lemon
A bouquet of herbs
1/8 tsp of nutmeg
Stoned raisins
Pinocchi (pine nuts)
or
Shredded almonds
1 Tbsp of burnt sugar
Espagnole sauce
Instructions:
Heat butter then add onion and flour; slightly fry and add lemon juice and zest, herbs, nutmeg, raisins, pine nuts, and sugar. Mix them well and add onto Espagnole sauce. Keep sauce warm on a double boiler.
