Ravioli Recipe
Ingredients:
1/4 lb of flour
3 or 4 pcs of egg yolks
Salt
2 oz of butter
Forcemeat (fowl, game, or fish)
Grated cheese (Parmesan)
Stock
Gravy
Instructions:
Combine flour, two egg yolks, butter, and salt; mix thoroughly till formed to paste, smooth and firm. Wrap in moist cloth, at about 30 mins. Roll out to thin sheet; moisten with water using a pastry brush then cut to round pieces, 3-inched diameter.
Combine forcemeat, grated cheese, and 1 or 2 egg yolks; place a teaspoon onto each round sheet. Fold then pinch edges, forming a puff. Let dry and blanch in boiling stock, at about15 mins then drain.
Grease a baking dish and arrange ravioli in single layer. Sprinkle lots of Parmesan on top, and finish the layering (ravioli and cheese). Cover with gravy and bake for 25 mins. Serve at once.
