Ravioli alla Fiorentina Recipe
Ingredients:
Beetroot; rinsed
4 eggs
1 oz of grated cheese (Parmesan)
1 oz of grated cheese (Cheddar)
2-1/2 oz of boiled cream (or milk)
1/8 tsp of nutmeg
Flour
Salt
Stock
Gravy
Instructions:
Boil the beetroot till cooked through. Place it in (cold) water, at about some mins and drain. Chop then add eggs, grated cheeses, cream, salt, and nutmeg; mix thoroughly till formed a firm and smooth paste.
Roll them into walnut-sized balls and dust with flour then let dry, about 30 mins. Carefully drop into (boiling) stock. Once they are floating, they are done; take out and place them on a dish.
Sprinkle Parmesan all over then pour gravy.
