Pollo all’Oliva (Chicken) Recipe

Ingredients:

1/2 piece of onion; chopped
1 piece of celery stick; chopped
1 piece of parsley sprig; chopped
1 piece of carrot; chopped
1/4 pound of butter
Fowl; cut up
Boiling stock (for basting)
4 pieces of Spanish olives; cut up and pounded
8 pieces of whole olives
3 Tablespoons of tomato puree (reduced)

Instructions:

Heat butter and add onion, celery, parsley, and carrot; cook and add fowl till browned completely. Turn as necessary; baste with (boiling) stock. When fowl has cooked thoroughly, add (reduced) pureed tomato and (pounded and whole) olives.
