Pollo alla Villereccia (Chicken) Recipe
Ingredients:
1 piece of fowl; quartered
3 ounces of butter
1 Tablespoon of flour
1 cup of stock
Bacon bits
Ham bits
3 pieces of mushrooms (boiled)
1 piece of onion (stuck with 3 cloves)
2 pieces of egg yolks
2 Tablespoons of cream
1/2 piece of lemon
Instructions:
Place the quartered fowl inside the saucepan; add flour and butter then place above moderate heat. When well-browned, add stock, bacon bits, ham bits, mushrooms, onion with cloves, and more butter. When cooked thoroughly, skim its grease off.
Get its sauce then pass through the sieve. Add egg yolks and cream; mix thoroughly then add juice from lemon. Pour mixture onto the cooked fowl.
