Pollo alla Fiorentina (Chicken) Recipe
Ingredients:
Fowl
Vegetables
Peppercorns
Stock
Cooked rice (or macaroni)
For the Sauce:
2 pounds of tomatoes
1 cup of stock
1/4 pound of chopped ham
3 pieces of bay leaves
1 piece of onion (stuck with cloves)
1 teaspoon of Liebig
Instructions:
Roll fowl on buttered or greased paper then place on an ovenproof dish. Add any desired vegetables with some peppercorns on the dish. Place inside an oven and leave for 2 hours.
Place fowl with the vegetables on 8 cups of stock; simmer it for 1 hour. To serve with cooked rice then pour over the sauce. Serve immediately.
To make the sauce, combine the potatoes, stock, ham, bay leaves, onion w/ cloves, and Liebig. Allow to simmer, at about 90 mins.
