Pollo alla Cacciatora (Chicken) Recipe
Ingredients:
Bread
Forcemeat (fowl)
Tongue; chopped
Chopped herbs (for flavoring)
Cream
Butter
Stock
Tomato (puree or sauce)
Flour
Eggs (beaten)
Instructions:
Cut the bread to square or round shapes. Place a tablespoon of forcemeat, little pieces of tongue meat, and herbs on top of each shape; cover it with bread (of same shape). Arrange them onto buttered (fireproof) dish.
Moisten thoroughly with tomato sauce (or puree), butter, stock, and cream. Cook till all its liquor has been absorbed; turning once to cook each sides.
Roll them on flour then dip onto beaten eggs and fry till golden or brown. Serve at once.
