Pignoli Italian Cookie Recipe
Ingredients:
500 gms Almond paste
2 c white sugar
4 egg whites
1/2 c pine nuts
Instructions:
With a food processer, break up the almond paste into a granulated form. Put in a mixing bowl and gradually add the sugar.
Then beat the eggs until they become stiff. Fold the egg whites into the mixture gently.
Drop 1 spoon of the almond paste mixture on a greased cookie sheet which has been floured. Then Press pine nuts to cover the top and bake in preheated oven (325 deg F) for around 1/4 hr.Set to cool on rack.
