Piccioni alla minute (Pigeons) Recipe
Ingredients:
2 pieces of pigeons
2 ounces of butter
2 pieces of truffle; cut up
2 pieces of livers (fowl)
1/2 pound of sweetbread cuttings (boiled)
A bunch of herbs
Salt
1 Tablespoon of flour
Stock
1/2 glass of Burgundy
Instructions:
Place the pigeons on a stew pan with butter, truffles, livers, cuttings of the sweetbread, salt, and herbs. Cook till slightly browned. Combine Burgundy, flour, and stock; add onto the pan. Continue to stew slowly for 30 mins.
