Petto di Castrato all’Italiana (Breast of Mutton) Recipe
Ingredients:
mutton breast
forcemeat of veal
2 pcs of egg
a bunch of herbs
some spices
1 Tbsp of Parmesan; grated
Instructions:
Stuff mutton breast with forcemeat along with beaten eggs, some spice, herbs plus Parmesan. Braise in some stock together with 2 onions plus some herbs. Serve this with some sauce (Italian).
