Petto di Castrato alla Salsa piccante (Breast of Mutton) Recipe
Ingredients:
mutton breast
forcemeat of veal
2 pcs of egg
a bunch of herbs
some spices
1 Tbsp of Parmesan; grated
Instructions:
Prepare a Petto di Castrato all’Italiana (Breast of Mutton) dish. Before putting sauce, allow to cool then fillet.
Flour over then fry with butter. Serve this with some sauce (piquante) or some “New Century” (1 dessert-spoon) in some gravy or stock (1/4 pt).
