Pesce alla Genovese (Sole or Turbot) Recipe

Ingredients:

1 pc of fish (mullet, turbot or sole)
1 1/2 oz of butter
1 pc of carrot; cut-up
1/2 stick of celery
1 sprig of parsley
1 pc og nutmeg
1 pc of onion
1 clove of garlic
a pinch of salt
1 pc of anchovy; scaled
a pinch of pepper
2 pcs of mushroom
1 pc of tomato; mashed
2 Tbsps of flour
some spices

Instructions:

Fry onion in butter, adding chopped carrot, celery, parsley plus scaled anchovy (salt), which dissolves in butter. Put in sliced fish, some spices and some pepper.

Simmer mixture for some minutes and then put in mushrooms, some flour and mashed tomato. Mix everything together, cooking for 20 minutes.
