Pan-forte di Siena (Sienese Hardbake) Recipe

Ingredients:

1/2 lb of honey
Filberts; halved or quartered and slightly browned
Lemon zest (candied)
Cinnamon (ground)
1/4 lb of grated chocolate
1 Tbsp of corn flour
2 Tbsps of ground almonds
Wafers (large)
Halved almonds (for garnish)
Almonds (blanched)
Pepper

Instructions:

Boil honey inside a (copper) saucepan; add almonds, filberts, candied zest, little pepper, little cinnamon powder, and chocolate. Stir thoroughly then slowly add flour and (ground) almonds. Take out from the heat.

Spread onto wafers then make 1-inch thick of each cake. Garnish almonds then dust confectioner and ground cinnamon over the cakes. Bake slowly for 60 mins.
