Ostriche alla Veneziana (Oysters) Recipe
Ingredients:
oysters
1 stick of butter
1 tsp of shallots; chopped
1 c of truffles; chopped
4-5 Tbsps of lemon juice
forcemeat (fish)
Instructions:
Remove a number of oysters from shells, cooking them with butter, their liquor and shallot, adding a small amount of lemon extract.
Inside deep shells, place forcemeat (a layer) plus truffles, 1 or 2 oysters, another forcemeat layer then cover with shell.
Put into kettle then steam. Remove shell covering then arrange on napkin before serving.
