Neapolitan Soup Recipe
Ingredients:
1/4 lb of forcemeat (fowl)
1 Tbsp of flour (potato)
1 Tbsps of Bechamel sauce
1 egg yolk
Stock
Peas (boiled)
Asparagus tips
Soup (clear)
Instructions:
Combine forcemeat, flour, Bechamel, and egg yolk; mix thoroughly and place mixture into the tube (same round size as the macaroni). Boil the stock then squirt in the mixture from the tube or pipe, making about 1-1/2 inch long.
Simmer for 20 mins. Serve at once in good (clear) soup.
