Neapolitan Sauce Recipe
Ingredients:
1 pc of onions; cut up
Ham; cut to bits
1 glass of Marsala
1 c of veal gravy
1 pc of thyme sprig
1 pc of bay leaf
4 pcs of peppercorns
1 pc of clove
1 Tbsps of mushroom cuttings
2 c of Espagnole sauce
1 c of tomato sauce
1/2 c of game stock (or essence)
Instructions:
Heat butter on a saucepan then add onion and ham; fry them then add veal gravy, Marsala, thyme, (bay) leaf, peppercorns, clove, and mushrooms; stir thoroughly then reduce into half.
Combine Espagnole and tomato sauces, and stock on a saucepan; reduce mixture into one third then add onto the mixture of spices. Let it boil for some mins then pass mixture through the sieve.
When using, warm sauce first inside a double boiler.
