Neapolitan Anchovy Sauce Recipe
Ingredients:
3 pcs of anchovies
1 tsp of fennel; chopped
1/8 tsp of cinnamon
1 tsp of parsley; chopped
1 tsp of marjoram
Juice from 1/2 pc of lemon
1 tsp of flour
1/2 gill of cream (boiled)
1 pc of garlic clove (with a cut)
Vinegar
Instructions:
Wash the anchovies with vinegar. Get the bone then pound on the mortar along with the cinnamon and fennel.
Combine with marjoram, parsley, juice, flour, cream, bone from the anchovies. Pass mixture through the sieve then add garlic.
Let it boil. Add small amount of its liquor if anchovies are cooked in an oven. Discard garlic prior to serving.
