Mullet alla Tolosa Recipe
Ingredients:
1 pc of mullet
2 ozs of butter
a pinch of salt
1 pc of small-sized onion
1 pc of parsley
some almonds; blanched
1 pc of anchovy
some mushrooms (button)
2 Tbsps of tomato puree or sauce
Instructions:
Remove gills and fins of the mullet. Place mullet in dish (fireproof) along with salt and butter. Chop onion, parsley, anchovy, almonds and mushrooms (softened in warm water). Spread over fish then bake dish for 20 minutes.
Add tomato puree or sauce. Serve when it is cooked. Sole can also be used aside from mullet.
