Minuta di Fegatini (Ragout of Fowls’ Livers) Recipe


Minuta di Fegatini (Ragout of Fowls’ Livers) Recipe

Ingredients:

Livers (fowl or turkey); halved
Flour
Butter
Chopped parsley
Chopped onion
Salt
Black pepper
1/2 cup of boiling stock
1/2 glass of Chablis

Instructions:

Flour the halved livers. Fry them lightly on butter together with parsley, salt, pepper, and onion. Add Chablis and stock; cook till sauce has reduced. Serve hot with bordered macaroni (or Risotto, Polenta).

Note: Livers can be cooked in (meat) gravy, and no need to flour them.
