Minuta alla Milanese (Lamb’s Sweetbread) Recipe
Ingredients:
Sweetbread (lamb)
Cock’s combs
Liver (fowl)
Flour
Butter
Onion
Half glass of Chablis
1 cup of stock
A bunch of herbs
Risotto all’Italiana
Instructions:
Cut (equal quantities) sweetbreads, cock’s combs, and liver into filbert-size pieces. Flour then slightly fry on butter with small onion bits.
Add Chablis, herbs, and stock; reduce sauce then add one tablespoon of flour and butter (fried together). Arrange the Rissoto on the border and place sweetbread with sauce on the center.
