Minestra of Semolina Recipe
Ingredients:
some stock
3 ozs of semolina (per 4 c of soup)
some Parmesan; grated
Instructions:
Put in desired amount of stock into saucepan then heat over moderate fire. When stock starts boiling, gradually mix semolina, stirring so it doesn’t get lumpy. Continue cooking until semolina softens.
Serve and hand Parmesan separately.
