Minestra alla Capucina Recipe
Ingredients:
1 pc of anchovy
4 ozs of rice; boiled
1 pc of small-sized onion
some butter (for frying)
some stock (good)
Instructions:
Scale and pound anchovy. Cut onion across then fry along with rice and anchovy. Put in some salt then when rice turns golden, remove onions. Slowly add stock ’til dish will be as smooth as pudding (rice).
