Merluzzo in Salamoia (Cod) Recipe
Ingredients:
1 pc of cod (or any of the following: whiting, red mullet or hake)
1 Tbsp of salt
some marjoram
some mint
some chervil
1 pinch of parsley
2 pcs of onion
1 pc of turnip
1 pc of mushroom
2 pcs of cloves
1 c of milk
1 pc of egg
cream
Instructions:
Put onions, salt, parsley, mint, marjoram, chervil, mushroom, turnip and cloves (heads) into saucepan. Simmer with milk, taking about 30 minutes, letting everything settle in pan’s bottom.
Pass mixture through sieve, adding cream or milk of equal amount. The cook fish over low fire. After cooking fish, pour sauce off into another bowl, leaving only little for keeping fish warm.
Stir sauce constantly, keeping milk from curdling. Thicken sauce using egg yolk then pour over fish when served.
