Marinata di Cervello alla Villeroy (Calf’s Brains) Recipe
Ingredients:
Brain (calf or sheep)
Stock
2 cups of sauce (Bechamel)
3 pieces of egg yolks
1 ounce of butter
Juice from 1 pc of lemon
Forcemeat (fowl)
1 Tablespoon of flour
Pasta marinate
Instructions:
Boil brain with the stock and wipe thoroughly then cut. Reduce the Bechamel sauce then add egg yolks, juice, and butter. Boil then add the pieces of brain. Allow to cool.
Take the pieces of brain out then form into small walnut-sized balls. Combine forcemeat and flour; spread out onto the paste-board very thinly then wrap each balled brains. Dip on the (pasta) marinate then fry till golden.
