Manzo con sugo di Barbabietole (Fillet of Beef) Recipe
Ingredients:
1 pc of rump steak or fillet
3 pcs of beetroot
a pinch of salt
Instructions:
Chop beetroots and put into pot, covering with enough water. Ferment this for 5-8 days (depending on season) in a temperate place, froth (covering water) indicates needed fermentation.
After this, remove beetroots, also skimming off froth. Put beef into fermented liquid plus a pinch of salt. Braise this for 4 hours before serving.
