Manzo alla Certosina (Fillet of Beef) Recipe
Ingredients:
1 pc of rump steak or beef fillet
2 slices of bacon
3 tsp of olive oil
a pinch of salt
a pinch of nutmeg
minced anchovies
chopped herbs
1 clove of garlic (small); cut across
Instructions:
Put fillet beef or steak into stewpan along with bacon, salt, oil and nutmeg. Cook this uncovered, occasionally turning over meat. When brown in color, add anchovies, garlic and herbs. Pour some stock, cover pan then continue cooking.
Once cooked sufficiently, skim grease from sauce then pass sauce through sieve. Pour over beef. Remember that garlic must be left in only for about 5 minutes.
