Lingua di Manzo al Citriuoli (Tongue with Cucumber) Recipe
Ingredients:
1 pc of ox tongue
a pinch of salt
a pinch of pepper
a dash of nutmeg
some chopped parsley
bacon; cut into bits
veal
1 pc of carrot
1 pc of onion
some thyme
2 pcs of bay leaf
2 cloves
some stock
Instructions:
Boil tongue gently ’til skin can be peeled off, lard and season with pepper, salt, parsley plus nutmeg. Boil with veal, ham, bacon bits, onion, carrot, cloves, bay leaves and thyme.
Pour fine stock, simmering it gently ’til cooked. Transfer tongue to dish then garnish with cucumber slices (fried). Boil cucumber (5 min) before frying.
Serve with piquante (sauce) made using “New Century” (1 dessert-spoon) plus Espagnole (1/4 pt).
