Lepre in istufato (Stewed Hare) Recipe
Ingredients:
3 ounces of butter
1 piece of onion; cut up
1 piece of garlic clove (with a cut)
1 piece of marjoram sprig
Ham; cut up
Hare; cut up
1 glass of Chablis
1 glass of stock
Tomato sauce (or mashed-up tomato)
1/8 teaspoon of spice
Mushrooms
Instructions:
Place butter, onion, garlic, marjoram sprig, and some ham on a stew pan; slightly fry them. Add pieces of hare; cook till browned. Add stock and Chablis onto the hares.
Add small amount of tomato sauce, some mushrooms, and spice. Discard garlic then stew, covered, slowly for one more hour. Stirring the mixture frequently.
